At Søllerød Kro, we have always known that Brian Mark Hansen is something truly special. This was firmly cemented in January 2023 when he and his Danish team won the Bocuse d'Or, the world’s most prestigious culinary competition—often regarded as the unofficial world championship of gastronomy.
We are, of course, immensely proud to have a global culinary star leading our kitchen. But Brian’s excellence goes far beyond his latest triumph. Since taking over as head chef in 2013, he has been the driving force behind a relentless pursuit to make Søllerød Kro one of Denmark’s finest dining destinations—where the guest's experience is always the highest priority.
Brian Mark Hansen’s cuisine is rooted in classic traditions yet distinctly his own. While he embraces time-honored ingredients and techniques, he constantly pushes boundaries, exploring new aromas, flavors, and visual expressions. Asian nuances breathe new life into classic sauces, while fermented vegetable broths and other hidden elements from the plant kingdom add layers of depth and complexity.
Sauces are among his greatest passions, serving as the foundation for both flavor and texture, while also offering our sommeliers exciting new opportunities for pairing with bottles from the cellar.
Furthermore, during his tenure as head chef, Brian Mark Hansen has become one of Denmark’s foremost experts in the use of caviar, which plays a central role in several of his signature dishes.
Even before taking over the kitchen in 2013, Brian Mark Hansen had Søllerød Kro in his blood. From 2007 to 2011, he served as sous chef here, and his culinary journey has also included time at Kong Hans Kælder and Ruths Hotel.

Peter Fagerland,

In 2024, Peter Fagerland joined Søllerød Kro as Assistant Restaurant Manager after 15 years at Dragsholm Slot. There, he played a pivotal role in shaping both the culinary and service profile of the historic castle in Odsherred—a tenure that saw Dragsholm earn a MICHELIN star and membership in the prestigious Relais & Châteaux organization.
Peter Fagerland’s passion for exceptional service runs deep, making him a natural fit for Søllerød Kro’s team of dedicated waiters. With the guest always at the heart of the experience, he and his colleagues ensure that every visit feels truly special.
Beyond service, Peter is recognized as one of Denmark’s finest sommeliers. His deep knowledge of wine enriches both guests and colleagues alike, further elevating the dining experience at the inn.

The Story
Once upon a time, nearly 350 years ago …
Søllerød Kro first opened its doors in 1677, when the local priest was granted permission to run an inn for townspeople and travelers. Nestled in a picturesque whitewashed building by the village pond - between the church, forest, and castle - the inn quickly became a cherished part of the community. With the arrival of the automobile in the 1920s, Søllerød Kro evolved into a popular destination, drawing visitors from near and far to enjoy its hospitality and stunning surroundings.
Today, the historic building is listed and preserved with great care and respect. As a guest, you can sense the many historical details, seamlessly blended with thoughtful modernizations that create a truly special atmosphere.
There is an undeniable timelessness here—the quiet dignity of a place rich in history, yet also a warmth and genuine welcome, true to the spirit of an inn.
Søllerød Kro received its first MICHELIN star in 1987 and has maintained a star in the guide every year since 2007.
Since 1993, the inn has been owned by the Jordan family and is currently under the stewardship of Michael Jordan.

Brian Mark Hansen
Hailing from Southern Jutland, Brian Mark Hansen has served as head chef at Søllerød Kro for since October 1, 2013. His previous experience includes positions at Ruths Hotel in Skagen, Kong Hans Kælder, and Søllerød Kro, where he worked as sous chef from 2007 to 2011. In February 2011, he became head chef at Christiansholm Castle.
Throughout his tenure as head chef, Brian has successfully maintained Søllerød Kro’s MICHELIN star - an achievement that in 2024 marked its 18th consecutive year. In 2018, the restaurant was named Restaurant of the Year in the Danish Dining Guide and later won the prestigious Nordic Prize for Best Restaurant in the Nordic Countries.
Most recently, in January 2023, Brian made history by winning gold and the title of World’s Best Chef at the renowned Bocuse d’Or competition in Lyon.
Christian Ebbe
Christian Ebbe began his career at Søllerød Kro in 2005, working under Jakob de Neergaard—first as a chef, then as sous chef, and later as assistant head chef. When de Neergaard left, Ebbe was the natural choice to take over as head chef after the summer of 2011. He played a key role in maintaining the restaurant’s MICHELIN star in 2012 and 2013 before leaving in September 2013.
Jakob de Neergaard
After spending six years working at several MICHELIN-starred restaurants in Belgium and France, Jakob de Neergaard returned to Denmark as one of the country’s most classically trained French chefs. His leadership at Søllerød Kro significantly elevated its reputation, earning widespread recognition—including the MICHELIN star in 2007 and the title of Restaurant of the Year in the Danish Dining Guide 2005. He stepped down as head chef in 2011.
Casper Vedel
Casper Vedel worked at Søllerød Kro under Jan Pedersen, Kristian Østergaard, and Paul Cunningham before assuming the role of head chef himself. He remained in the position until the summer of 2002.
Paul Cunningham
The British-born Paul Cunningham had been with Søllerød Kro for several years before taking over as head chef following Kristian Østergaard, under the leadership of Jan Pedersen. When Pedersen departed, Cunningham proved his culinary excellence by retaining the restaurant’s MICHELIN star. He left Søllerød Kro in 1998.
Jan "La Cocotte" Pedersen
Having already built a stellar career at La Cocotte at Hotel Richmond in Copenhagen—where he earned a MICHELIN star in 1983, catered Simon Spies’ wedding, and helped develop the menu for the renowned Babette’s Feast—Jan Pedersen continued his journey through Scanticon and Restaurant Mikkelgård before becoming head chef at Søllerød Kro in 1996. Alongside Kristian Østergaard, he regained Søllerød Kro’s MICHELIN star in 1997. Pedersen left the restaurant later that same year.
Steen Eis Thomsen
Steen Eis Thomsen was the first Danish head chef at Søllerød Kro in over a decade, serving for nearly three years.
Francis Cardenau
Hailing from Southwestern France, Francis Cardenau had honed his craft at several three-MICHELIN-starred restaurants in Paris before heading north. Søllerød Kro’s owner at the time, Jørgen Tønnesen, was also co-owner of Restaurant Copenhague on the Champs-Élysées and was well aware of Cardenau’s talents. He joined Søllerød Kro in late 1989 and played a vital role in preserving its MICHELIN star before departing in 1993.
In 1997, he became head chef at Kommandanten, which became Denmark’s first two-MICHELIN-starred restaurant.

Jan Restorff, restaurant manager
Although Faroese-born Jan Restorff hails from one of the most remote corners of the Kingdom of Denmark, he is a central figure in the history of Søllerød Kro. Since taking on the role of restaurant manager in 1999, he has safeguarded and nurtured the restaurant’s spirit—one that has always placed the guest at the heart of the experience. It is not about grand gestures but about anticipating guests’ needs before they even realize them.
While food is a key part of the Søllerød Kro experience, making guests feel truly at home is just as important. For over 25 years, Jan Restorff has been a pioneer in hospitality, an achievement that led the renowned White Guide to rename its annual service award to "Jan Restorff of the Year."
His passion for exceptional service is matched by an unwavering enthusiasm for the world of wine. As the architect behind Søllerød Kro’s wine list and pairings, he has curated a selection that is both deep and diverse.
To Jan Restorff, wine is more than just a beverage—it is a reflection of people, time, and place. When he senses a guest’s curiosity, he delights in sharing its stories. Over the years, he has expanded Søllerød Kro’s cellar, earning repeated recognition as Denmark’s best wine list by both the Danish Dining Guide and the White Guide.
